I have a few questions about flight dynamics.
1. Are they "hard wired" to aircraft or can they be changed?

2. Can the default 737-800's flight dynamics somehow be used with the POSKY 737-800 BBJ2?

It should be possible to swap the flight dynamics of any two aircraft. The sim doesn't know what the visual model looks like & the FDEs of all third party aircraft are based on the default files anyway. I've never done this for an FSX aircraft but it won't do any harm to try it.
The way I would do this is to take copies of the AIR file & Aircraft.cfg from the default B737_800 & paste them to your Desktop.
Rename the AIR file to the name of the POSKY 737-800 BBJ2 AIR file.
Copy the [fltsim.x] & [contact_points] entries from the Posky Aircraft.cfg & paste them into the appropriate places in the default Aircraft.cfg, replacing the existing entries.
Paste the two files into the main folder of the Posky aircraft overwriting the originals. (Back up the original files first.)
Now go & try it in FSX. Tell me if it worked.
