well, airliner style is like this (sorry for really pore representation, but u should know wat it looks like

since the CH yoke is like a Cessna or Beechcraft etc. then the y axis (elevator) is probably a sliding var resistor. an easy way to make the airliner style work similarly is to hav the slider fixed, while the back and forth movement slides the slider back and forth.
an alternative, is to replace the slider with the 'knob' equivalent. goto any local hardware store (radio shack or sumthin like that) and ask if they hav any equivalents (showing them the slider).
also, build first, wire later - or wire as u go largely depends on how u build the thing. if its going to be sort off messy and open, build then wire. if its going to be very neat and proffesional looking, wire as u go, making sure u mark each wire or take note of wat they do (routing the wires well is the key, that and enough of the stuff
