Hi Sam The Panel Design forum might be a good place to start.

Try CfgEdit.http://www.simviation.com/fsdesign_panels1.htm
It should do all you want & is easy to use. It won't read the later XML gauges.

Another question, can and how can you eject from an aircraft that you can. (i.e. a jet fighter.)

I don't think this is possible unless it's a feature on a particular aircraft.

How can I dasign panels?
