Well we've got some lovely ones here in the Vintage section. Of course the Spitfire V and XIV. Otherwise its down to what people can fly, Ju88s and 52s, Me262, Lancaster, B24, Mig3, P38, P51, P36, P39, B29, and Swordfish.
I'd suggest maybe some Stearmans of Tiger Moths would be a nice change of pace, and they look good.
There also a nice selection of aerobatic aircraft available for serious stunting, there is the Extra 300 obviously, the SU-29 and Pitts are available here under props. Harvard/Texan (T6)?

will the airshows be in FS2004 now that it's release is in just a few days
Some WWII style dogfight demonstrations might be cool as well.....and perhaps some mock-bombing runs....
