How do I set up headphones so that I can hear ATC and only ATC through them, like in a real plane.

The only way I can think of is to turn all the other sound options off in 'settings', and then plug headphones into the sound card output, rather than PC speakers. You could have a little bit of background as ambience: another upside is that you could fly with nobody else hearing you!

If you have a four channel sound card you might get that to work. It won't have ATC exclusively but the rear speaker channels are where ATC is loudest.
