I wish I could remember...
It has something to do with the bi-polarity of the soap-molecules and the Hydrogen-bridges between the water molecules. They react in some way, so that the bridges are broken, but I forgot the details and even if I did remember, it's a bit too complicated to explain in one post.  ::)
