Pork Curry with Basmati Rice and French Fries (Chips!)...>>>

Slices of Roast Pork (from yesterdays roast Pork joint), cut into bite-sized chunks.
Small Onion, chopped.
Garlic, crushed.
Chillie, chopped.
Tomato, chopped.
Coconut milk.
Fresh Coriander, chopped.
Madras Curry Paste.

All gently saut

I did some wedding photos for the son of a friend of my mother... And she makes some wonderful curry, so now she makes me some every few weeks  ;D

On the very rare occasion... :(... that I get taken to a proper Indian Restaurant for a nice Curry meal, I find that nothing that I make compares to the real thing!
After one particularly delicious meal, I asked the Chef for the ingredients and method of cooking his amazing Curry...

..."its my secret"...he said, with a grin!.... ;)...!

I experiment, but nothing so far matches the; "Proper Curry"!

I will need LOTS of Indian "stuff" in my Larder first...

(Including an Indian Chef?...Mrs. Patak?)... 8-)...!

Have you guys ever tried Fijian fish curry? Awesome! Goes a treat with a couple of bottles of Spitfire or Bishops Finger ;)
