WW2 era:
Interceptor/fighter=Spitfire MkIX or XIV. Simply the finest.
Attack=Mosquito. First true multi-role aircraft.
Bomber=Lancaster. Best heavy bomber of the war.
Transport=C-47. What can one say about this amazing aircraft?
Escort=P-51. Finest long range fighter ever.

Cold war era:
Fighter/interceptor=EE Lightning. Mach two pioneer. Simply the best.
Attack=Buccaneer. Nothing to touch it in the low level strike roll, even today.
Bomber=Vulcan. Fighter like performance and leathal payload. Last great British bomber.
Transport=C-130. Probibly the greatest transport aircraft of all time, except maybe the C-47.

Modern era:
Fighter/interceptor=F-15. Air dominance fighter supreme. Nothing else comes close.
Attack=Harrier. Still unique and still cutting edge.
Bomber=B-52. Greatest heavy/strategic bomber of all time. Will out live all its replacements.
Transport=C-130. Stll going strong into the 21st century. The C-47 of the modern era.

Oh dear, where do we start...

Going back sixty years or so,

Fighter - P-51 (I hate to say)
Ground Attack - Typhooooon
Bomber - Hard choice, toss up between B-17, Lanc and Mossie - I think Mossie wins for sheer originality and the fact its bomb load was the same as the '17. Lanc would win on noise though, and capacity.

Now,

Fighter/Interceptor - all-round the F-15, although equipped with Amraam the Tornado F3 would come close as a pure interceptor (just don't make it turn!). RoE defeat the point anyway. Once operational and equipped with Meteor the Tyhooooon (Eurofighter, not Hawker) should make a we bit of difference...

Ground Attack - Harrier (GR.3 and FRS.1), ask anyone on the Malvinas in 1982.

Bomber - TSR 2 (oh, they cancelled that!) Probably for strategic use the B-52. Tactically, particularly in GW1, the Tornado GR.1... GR.4 is a good bet with Storm Shadow

??? ???  That cant be possible.   Mossies can't carry 8000 lbs!

Fighter: P-40 Warhawk from the "Flying Tigers"

Bomber: B-25 the best all around but mostly a great bomber

Recon: P-38, yes they made a very special glass nose   P-38

Now:
Fighter: F-14 Tomcat no further explanition

Bomber: A-6 Intruder a mix of an F-14 and an F-18

Recon: SR-71 Fast and invisible

Off the top of my head, I do believe the P-38 "Droop Snoot" was used for tactical bombing.  The recon variant(s) shouldn't have needed modifications outside of removal of some guns, ammo boxes, etc. and addition of camera and respective equipment.
