But you miss out the most important information

What speeds are you flying at?

Like what Snippy said, that's your problem. You need to learn the aircraft before you can expect to fly it. It's like trying to cut steak without a knife.

funny you would say that, fsx default planes dont have md-11 so there is no guide for flying it in game.

Double check your payload as well.  Some aircraft you download will have full fuel and full payload, which places the aircraft way too heavy to fly.

Check weights and fuel.  With full fuel, don't expect to reach maximum cruising altitude with any airliner.  You will stall.  The same goes with payload.  Trim it down a bit.  Most airlines don't fly at full capacity.  They take the fuel they need and moderate payloads depending on passenger counts.

Also, 250-300 knots (I assume indicated airspeed) is way too much to have flaps down at 21 degrees.  While this may not result in a stall problem, in real life, you would likely damage something at such speeds.  You should be able to maintain a modest altitude (and attitude for that matter) with flaps up.
Cheers,
RB

Well, when all else fails, you can always fly the default Cessna.
