Yes, I even flicked the AP switch on and off a few times, nothing.

When in spot view and you pull back on the joystick do your elevators move?

If not then:
Either your joy stick is shot.
The joy stick is out of calibration.
You have the autopilot set.

If you are talking about the Acceleration F/A-18 this happened to me all the time and I just had to keep turning the autopilot on/off until I could get it to release.
