In real life fly-by-wire is generally a very good thing and helps minimize the loads on the pilot in the way of trim, and also allows the aircraft to be flown at the edge of the envelope without exceeding it. However, I find the fly-by-wire simulation in the MSFS A321 is highly unrealistic and best results for myself were obtained with it disabled all-together.
Try using lots of trim and also being very smooth with your joystick inputs. Be careful not to over correct either.
