It's obvious that you did not read the instructions or follow them step-by-step. Setting up FSX is NOT the same as setting up for other games, no matter how advanced you are.
Go back, follow the XP set-up and then FSX set-up word for word and see if it makes a difference. Just defragging doesn't help. Did you use O&O and follow the order Nick specifies? If not, you didn't do anything that will help FSX.
The fact that you have set your sliders, traffic and autogen the way you have means you have not done anything that the guide suggests. You can not maximize the performance the way you've done it.
Well... since you are an "advanced PC user" and it seems you know what you're doing, keep playing with the system settings yourself until you get what you want.

I'm glad you got it running good now. As Steve said, setting up for FSX isn't the same as for other games, even if you know a lot about computers which I believe you do. But remember that FSX isn't a game, it's a sim and it works much differently. As Nick Needham (NickN here on the forums) put it, "you have to think out of the box to tweak FSX."
That's also the reason that in many cases higher settings will work much better than lower settings. Much of it is due to the priority system that FSX uses to run things.
