Does the setting of the resolution affect the performance of the game? I got mine set at 1280x1053x32.

This is purely depending on your video card.
My 8800 is performing OK at 1680x1050.

I've got two Diamond ATI Radeon HD3870 GDDR4 512M video cards connected in a crossfire configuration.

I've got mine at 1440 x 900 x 16... What's the difference between x 16 and x 32? I don't really see any difference, visual or performance wise.

x16 or x32 means 16 bit colors or 32 bits colors.
In x16, you will get less colors, so the "degrade" will look ugly.
Take a look at the sky at dawn, once in x16 and once in x32, and you'll understand the difference.
