Record to avi ... don't know. But one fool proof method I use (using an Nvidia 7900) is to use the S-Video TV output on my graphic card and send to a DVR ... a Pioneer 220. I've created flight scenarios with Google Earth that will fly over areas I've been to in the past so my friends can visualize  what I've seen and enjoyed, and which is quite detailed. I have not yet done it with FSX but I may as I fly into some of the Idaho back country and after I quit bending the landing gear!  Google charges big bucks for their software recorder ... but if you're going to pay the bucks you could do your own this way. Granted ... it will be in DVD format ... but this is easily decoded if you need to edit. You could put a lot of flights on one DVD.  :)

FRAPS should do.
The freeware version is quite limited, but it allows you to record short sequences of 30 seconds maximum.

there is an option in Keyboard assingment ,but I can't remember where the recording files are going I guess I have to search again ,But I recorded once and I did it well,In fact I posted a video using this quite ago

open FSX >>go to setings>> Controls>>keyoard and mouse then search fo this

Double click over the video star stop and assign a key can be (/) for example,..I remember It consums all my hdd space but any video editor can fix that ,It recorded to a mpeg I use video edit magic and converted into AVI .

But Daube is correct the best option is to use fraps
