A tailhook is almost always found on naval aircraft of a government's military. It is a hook near the back of the plane that grabs the wires strung across an aircraft carrier's deck.
I have not heard of a 707 having a tailhook.

Within FS, there is a tailhook command that allow naval addons to deploy their own hooks. Some other addon aircraft simply use this command to enable other, unrelated operations.

This is used for all kinds of operations open & close cargo doors is one example Also used to deploy landing lights on some B737 aircraft. Although I have to agree with you I was using a B747-200 and when this came up I went HUH! scratched my head and said what the colorful metaphor here. You get used to it and just ignore it. 8-)

Well, in naval fighter you will find the tailhook, so they can stop on the deck of the airfcraft carrier.
On airliners you might find the tailskid, they have this kind of skid that is for anusual attitude take off or short field take off. You can find it in most airplanes, 73, 72, a 380, 77, even on the Concorde.

I'd like to know which key it is...

It doesn't have a default assignment, so you have to go into the assignments menu and find it I forget what it's precise name is but something like tailhook extend and retract or the like under general aircraft commands
