It really annoys me to have Gradual Transition always checked on. Can it be set unchecked from somewhere in the sim so I don't always have to go to that screen and turn it off?

Save your default flight with it turned off.
At that time [1909] the chief engineer was almost always the chief test pilot as well. That had the fortunate result of eliminating poor engineering early in aviation.
