Your correct there, for one, the B206 is way too responsive, and unrealisticly unstable when you put all the default sliders too the max, this seems to be so for most addon choppers too. It is best too knock the general slider down a bit too the left, i havent found great changes in how far it should go. I believe that there was a article on how to tweak it better on hovercontrol, but i cant look it up for you since im banned there.
But, i think it is better too use adjusted flight dynamics, or 3rd party addons. For the B206 for example you got a great replacement, i believe by owen hewitt, or the dodosim 206,with realistic dynamics as a payware addon.
For the Cessna 172 you got the freeware realair, and there must be a great looking payware caranado plane, dont know where though. For the boeings, well you got the payware PMDG/CLS stuff that seems too top it all, and freeware posky/vistaliners, i personaly prefer the latter, all you need is a good panel(PSpanel freeware one) and sound.
I've heard the default DC-3 is also very unrealistic, wich seems to be quite plausible, since i own the DC-2 payware uiver, and that seems to be handling completely different compared too the default DC-3.
You could offcourse always try experimenting with the handling and such alike by googling on the flight charteristics/data online, you can get a lot of basic stuff from the internet on almost all of the bigger planes.
