If you go through the options menu, to contols, then to assignments, there should be a selection box where one of the options is general aircraft commands. Select that, then scroll down through the assignments until you get to "raise/lower tailhook" (I think thats what it is ;)

At first THANKS for your fast answer! ;)

I tryed it but there is no commando like "lower/rasier tailhook"  just the normal ones I even tried "concorde nose up/down" but it still doen

There should be a tailhook command in the options/control/assignments screen.  However it may have a slightly different name due to the language translation.
