It's been a while I've done it, and I've saved my backup files already modified, so... anyway, open the aircraft.cfg and search for the [views] tag.
Once there, play a little with the values of the string "eyepoint=". One of them (the longitudinal value) needs to be increased of a 12 or so feet so your point of views is brought forward.
It should be... but take this with a grain of salt, as it's been a while... the first of the three values.
You can do these experiments with the sim on, it suffices that before changing values you select another plane only to reselect the meljet after having saved the file with the new values.
As for the best panel question... try searching around on this site or even others. I can't remember which panel I used on those 777, when I still used them, and the only 777 I have on my sim at this moment is the default one (that has one of the worst panels ever to be conceived. I myself, with no prior experience in the field, could do better in less than three days' work).
