Are you speaking of default planes and common add-ons?

Forget it.

It's practically impossible to overheat a default plane's engine, let alone have it going afire. Same goes for the vast majority of add-ons.

There is a free Yak around that needs care in monitoring the engine temperature or it goes in smoke, though I can't remember a lot about it.

Does anyone remember about this plane?

I do, I used to have it but uninstalled it because I got tired of not being able to start the engine and the engine failing when I eventually got it started  ::) I like realistic aircraft in FS, but I'm afraid the Yak 18 is too realistic for my liking  ::) :P ;)

I don't think that a behavior like the one you described is too realistic, though I have to admit that I never tried that plane myself.

What was the problem exactly with the engine not starting? It really can't be that complex unless the engine itself is... particular, and I seem to remember it was a radial.

Well, we were talking about engine fire, then the CS 757 got out and I thought... ;D

The only 757 payware I ever used (and to make a review for a site of flight simulation at that, as I don't like that plane and sure I would not pay for it, and in that instance, to make the review, it was given to me) is the PSS and it hadn't a engine management that allowed engine overheat nor fire.

Actually the PSS 757 had probably one of the most simplified managements of the engines I ever found in a payware. The manual start-up was almost as difficult as pressing CTRL-E... :P
