When you engage the autopilot, the plane will automatically level out, meaning you can't turn the plane and change heading by simply moving the joystick. To change heading with autopilot, click the HDG button (or ctrl+h) and you can change your direction by moving the heading "bug" (it's the little orange tab) on your heading indicator.
Or if you have a flight plan set up on your GPS, you can just click the NAV button and that will automatically point you in the same heading as where you are going. Hope that wasn't too confusing.
