Wait...are you showing indicated airspeed? If so, you shouldn't ever have a time where a DC-10 is cookin' along at 300 except maybe at 28000 or so. Higher, slower, lower you would never go that fast. If it's true airspeed, that's different.
I believe the program AirEd (available on SimV of course) will allow you to edit it. Someone else could go into more detail, I try not to mess with my aircraft once I get them to the point I like them.
