What can ATC say in terms of names other than the fake ms airlines?

A lot, get some PAI packs from www.projectai.com for realistic AI and you will see, or hear rather, what I mean.

MS has an ATC Voicepack SDK on their Flight Simulator page, with a text file of all the phrases, airports, aircraft types, and airlines that are included in the default voicepacks.

The freeware program EditVoicePack will enable you to add even  more airports, phrases and callsigns.  Highly recommended, it really spices ATC up.
