Start flight at specified point in the air

I want to practice holding patterns at a VOR.  Instead of starting the flight at a nearby airport, how do I start the flight in the air near the VOR at a specified altitude, heading, power setting, etc.?

Start the flight as usual and save it when you get to that point.  All of your settings (time, date, weather, radios, speed, power) will be saved with it.  Then from the start menu select the saved flight.

Simply hit the ";" key to save any flight at any point.
