Is There An Add-On For CFS2 That Leaks A Little Bit Of Gas Out Of Your Droptanks When You Drop Them?

I strongly doubt it.  I have not looked into the matter but I believe that there is too much work that needs to be done in order to do so unless you just want the visual effect in which case there may be one out there.

Which version of FS are you using???

there are effects that show smoke from guns and theres smoke from rockets, so I suppose it could be done, no by me though  ::)
