Well, when you find and install those two panels I mentioned they will have the aircraft models packaged with them which are configured to work right with the panel. The 707-420 has one model, one livery, BOAC. The 727-200 included with the Richard Probst panel has several liveries included. Now, It is like you may desire different liveries with either. They could be found in different aircraft models by different authors. The changes you will have to make will be to the aircraft.cfg located in the associtated aircraft's folder. With any other models than the ones supplied the most common change you could have to make would be to the radio tuning frequencies section and the flaps position section. The reason? Many freeware models will com configured to work with "borrowed" panels from the default FS9 hanger.
The 707 is easy, typically they are configured to work with the default 747 panel, 4 engines you understand. A good many of the 727 models I've downloaded were configed to work with the 737 panel. now, the characteristics of the default planes are not always really acurate to the real counterparts. They are simplified and dummed down so to speak to make them simple and easy to pilot without reading an extensive manual. Now, I can't stab am accurate guess at everything you'd have to edit to make the panels function right with models other than the supplied ones. It depends on which model you are using with the panel in question. In the case of the 727, the flap postions and radion tuning frequencies are the most common edits for the Richard Probst panel. Mr. Probst includes a rather extensive appendix to his panels manuel on how to do this. In the case of the George Carty 707, the most like change you will have to make will be to the fuel system entries. In fact, I guarentee it for the 707-420 included ios the only 420 made for FS. All of the other 707 models are based on the more common 320 model which had a different fuel tanks layout and if you don't edit Mr. Carty's panel when using it in a 320 model engines 2 and 3 will not run. In any case, whatever mode you use with either panel, first thing to do is open the aircraft cfg that came with the panel and the aircraft.cfg that came with the model you downloaded and window them both side by side and scan down to see where any of the like entries are different and edit the new aircraft.cfg accordingly. If you run into trouble just holler and you can email them to me and I will adjust them for you.
