Yes, you can install your other programs to C:\. Things like Scenery (ORBX) etc and Modules (FSUIPC4) will look for your FSX registery and would install directly to FSX. REX can be installed to C as it is a stand alone and only sends or replaces textures before you Fly. SDK, ADE are also Stand Alone and can be put on C. You can still install aircraft, scenery etc directly to FSX as you normally would. Try to keep FSX on your SSD lean and clean.
Going from XP to 7 you should notice alot more stability. And with your CPU you'll probably cry with joy from the frames you'll get
