Animals only show up when your graphics settings are turned way up! (global texture resolution, scenery complexity, autogen density etc.). Also they only show up in certain places (don't know where). You have to be lucky to find them.
I believe that st. Martin has birds flying around. Go ahead, turn up your graphics settings, takeoff from TNCM and fly towards the cruise ship. No cruise ship? Turn your graphics settings up more!
BTW: I believe these grizzlies come from one of the Animal World Scenery packages found here on Simviation.
