This is the freeware high resolution water texture, I created a topic for it some time ago inthe FSX forum. The rendering at high distance creates a little bit of jaggies, but the result at low altitude (and medium altitude as well) is fantastic  8-)

I know what you mean about flying lost to find a good place! I flew around Chile from a randomly picked airport and found a great river valley and just started hitting the V key! Puerto Aryenes I think it was. I just hope I can remember which direction I was going, I spent more time looking at the scenery instead of paying attention to instruments.

This is all default.
This is the long lake you can see north-east of concrete mun (looks like a snake). It's not the lake directly north attached to concrete (which is beautifull too), but one which is, like, 15 minutes slow flight away, north east. On the map you can't miss it.

Exactely. I even have to confess that this is my main activity in FS. Sometimes I do IFR or VFR-more-or-less as well, but most of the time I fly random :)

Absolutely ! When I started flying in FSX, I was kinda forced into flying low and slow, because my computer was too old and could not refresh the ground textures fast enough (I was set at 2m/pixel, I didn't want the same res as FS9).

Now I have a nice computer (far from being top-notch, but still ok) which allows me to fly liners and jets.... but still I'm mainly spending my time flying old slow planes, exploring the landscapes, installing sceneries etc...  :D

I don't know for the FSWC settings, but basically I choose a little bit darker water (from one of the presets I believe), and then I increased the reflection of the sun, the scenery and the moon.

I have found such a pleasing balance that now I'm really afraid to launch it again and "damage" those settings
