In fact, the default weather can eventually give such a result on his own, you you set a certain weather and then you set the modification slider to medium or high. Sometimes if you are lucky, after half an hour of flight or so, the weather will start to build very interesting layouts, like very high cumulus, layers of stratus, high or low altitude etc... and it can get very impressive.... but again, you need patience and luck.
As for your shots, you did a very good job setting up those clouds layers, the visual rendering of the scenery is greatly enhanced by those clouds, it's much richer. Just one thing: it appears in the last shot that you set a layer of cumulus and then a layer of the very thin, flat cloud (I confuse them, as I already said before). You shoud try switch that to a single layer of the fluffly cloud (not cumulus or storm, and not the flat one in your shot), that will eventually result in a veru cool myst, just like in the Spartan in Vermont topic !
Then you can also mix those clouds with just a bit of cumulus, but I would start to fear for FPS
