Try adjusting your realism settings (never fly an eggbeater on full realism)

Try this configuration:

General Realism 85%
P Factor 85%
Torque 80%
Gyro - 100%
AutoRudder -UNchecked
Gyro Drift = UNchecked
Knots as Indicated
Crash tolerance to 100&

then go to your control/joystick sensitivity options and set all control options to 100% sensitivity, then set the rudder to 80% null.
