Probably a simple explanation, FsNovice.
If you're substantially off-course flying IFR, ATC will instruct you to fly a course that INTERCEPTS the course you should be flying. If you do what they say, they'll turn you on to the course you SHOULD have been on soon enough, once you're back on the proper courseline.
The alternative is to make a VFR flightplan from the start, or alternatively hit 'Cancel IFR' as soon as you're airborne. Then you can do your own thing, much more restful!
