Camera Upgrade Question

Hi All,
I'm in a bit of a predicament here, I'm looking to upgrade from the Nikon D40 due to it now being inadequate for the needs that its going to be used for from now on (wrestling photo's & christening's also have a contract for a few sites in the view of motorcycle track days).

I've been looking around at a few cameras of late online and the ones that I've narrowed it down to so far are:

Nikon D200
Canon EOS 450D
Canon EOS 40D

At the moment I'm swaying towards the body only version of these cameras with a view to getting either the Sigma or Tamron, 18-200mm & 70-300... but With these its the continuous shooting modes & frames per seconds thats swaying me towards these at the moment.

Any help or advice would be welcome
