Starting free flight with engine off/Default pilot

Hi everyone,
Two part post.
Is there a setting somewhere so I can start free flight with my engine off?
Also, can I change the pilot that sits in the cockpit, as seen from outside view?

Create a flight and once in the cockpit, configure things as you would like them. Save the flight, putting a check next to

At that time [1909] the chief engineer was almost always the chief test pilot as well. That had the fortunate result of eliminating poor engineering early in aviation.
