I think you'll like FSNavigator. I've used it since FS 2002 and wouldn't like to fly without it. You can turn off the airplane icon plus you can set up a flight plan then export it out to FS 2004 GPS or even VATSIM (I believe). It also has a feature where you click on a VOR, NDB or anyplace you put your cursor and drag toward another area on the map and it will give you the bearing to that same as using a map and protractor. Knowing that and using a wiz wheel you can navigate without much else in the way of navaids.
There's also some flight planning computers in software form you can download that will assist in calculating wind correction angles. I have an ancient one called "DSSCalc" that was made for Windows 3.1 that I still use. It also does tiime/speed/distance/fuel, altitude/airspeed, wind, weight/balance, climb/descent and conversions.
