Does anyone know a link to a good, high quality F16 or other high-speed military jet that has good cockpit and gauges, and is also viewable to other players in online multiplayer?

I have to agree with alrot. Kirk Olson's F-16 also has an update in the FSX Military section.
Also the IRIS YF-22 Raptor never gave me any fuss and it has some cool fictional repaints (or at least I hope they are). You can find it a http://www.irissimulations.com/download.php?list.3

fighter25, what coordinates did you use to fix the YF-22 burners?

i have mine at

light.3 = 6,   -21,    2.5000,     4.500, fx_f22burner
light.4 = 6,   -21,   -2.5000,     4.500, fx_f22burner

and they still look a little goofy.

also iris F-5 is great too, and it has a lot of textures. just replace the panel with the generic military 2 engine panel from here and you'll be all good.
