My guess would be the CFG file. There is probably a parameter for Never Exceed Speed, Never Exceed Mach, or Never Exceed G-limit parameter that is way out of whack. Your contact points may also be set up incorrectly. If none of these things seem to be the problem, swap out the .AIR file with a working one from a different aircraft. If the airplane works at this point, you probably have a corrupt or glitched .AIR file. If you know what you're doing, you can download a .AIR file reader like AIR Ed and mess around with the hex code. Be sure to backup the original in case you want to start over again.
If you direct me to the specific aircraft you're using, I'll mess around with it and see if I can figure out what the problem is.
