What's the difference between a NVIDIA GeForce 6800GT and a 6800XT?

6800GT has 16 pixel pipelines while 6800XT has 8. This makes the 6800XT considerably slower. On some 6800XT models it is possible to unlock extra 4 pipelines.

I just noticed that my Refresh Rate was set at 60 (lowest). Would there be any advantage to set it up a little higher?

Yes, set it to at least 85hz if your monitor supports it and you'll find it's a lot easier on your eyes and doesn't flicker nearly as bad.
