Good. Your system will be adequate!
As I said, I would use WidevieW if I had a dedicated Flight sim setup. But using Catalyst Control Center lets me do something similar.
I also haven't had a NVIDIA card for a long time. So I'm hoping that you can do something similar to CCC.
Microsoft, as I'm sure you know, will connect 2 or more monitors by "extending" the desktop onto the second monitor. From what you're saying, I guess that what you're using is extended mode.
I'll describe the CCC setup a little because I'm sure that NVIDIA must be able to do the same thing by now.
I have 6 "presets". These are screen arrangements that I've created for my needs. They are activated with a 3 finger salute (hot key selection).
Standard 1, 2, and 3 are just that: standard MS "extended" screens.
Dual Screen is a CCC arrangement where Windows thinks that I have one
real wide physical monitor.
Triple Screen is a CCC setup where Windows thinks that I have one physical screen that is as wide as 3 monitors.
This is not the same as 3 monitors in EXTENDED mode.
Flight Sim 3 Screens is the same as
Triple Screen but with modifications. THIS is what I switch to when I want to use all 3 screens for FSX.

This is two screens in extended mode. Notice that the task bar is only on the left side of the desktop.

And this is ALL THREE MONITORS as a single CCC monitor. If you look
very close you'll barely be able to detect that the task bar runs all the way across the bottom of the screen.

THAT is what I think that you need to create with your NVIDIA card. See the task bar across all the screens. Windows and FSX think that it's only one screen.

WidevieW does something similar, but in a totally different way by using a second computer with the extra monitors attached to that second computer. I also think that you need to buy two copies of WidevieW. One for each computer. I don't know, however if you need two copies of FSX.
I'm sorry if I can't help you more. I was hopping that someone with WidevieW experience would step up and answer your questions.
BTW - I used to have a separate monitor for a GPS. Then I bought a GPS panel from Desktop Aviator, the
Model 2450. It's a great buy.

As it is intended to be mounted in a panel, I built a "box" case for it. I have no room for a dedicated flight sim pit.
