that is most likely the infamous bug of applying FSAA.

The cure :
- open cfs3config
- under the "texture info tab", set composite terrain texture and composite Aircraft texture to "D3DUSAGE_RENDERTARGET".
- set AAx2
- quit cfs3 config by the menu.

then

open your vid driver panel :
- set AA and FSAA to your liking there, unchecking "application preference"

If this doesn't work, know anyway that it's related to the conjunction of use of FSAA and AA.

NB : cfs3 likes high resolution but not really 32 bits colours. So play with it too to see what is the best for your system. 1024x768x16 or 1280x960x16 are what is recommended for most systems.

I play with 1600x1200x16 and boy, doesn't it look good!  :D

You're right Mathias, it may not be the famous disco colours.

Anyway, to open the video card driver panel, right click on your desktop and choose "properties" in the drop down menu that appears.
Then in the vid driver panel, choose the "parameters" tab and click on "advanced" : there are a lot of options there to play with ;)
