I can't figure out how to make airplanes/boats/land vehicles to attack specific targets, can someone give me a tutorial?

Yeah, but in the mission editor or when you're actually flying the mission?  You're not giving enough information...

In the mission editor, I don't know...

In the mission, you can't, you can only command aircraft in your flight to attack something.

Sorry, in the mission editor.

If I remember correctly, all units automatically engage if the OPFOR is in range....

...so there really isn't anything you need to do, aside from setting the units up as combat effective.
