The trick to inverted over water for the dipping is to regulate the throttle v.carefully to control the altitude and just before you clip get all the way on again. That way you brush and the engine pulls you out of trouble ;)

Dips and taps are more like landing than flying...

You control sink rate with the throttle and speed with the attitude. Picture yourself doing an inverted gear up landing approach, the go around is done via power without any pitch changes required.

Great shots Ozzy...you're a definite master of this arcane art. :)

Sorry Ozzy, maybe I'm making your secrets too clear?
