As davy says... Free up one of those hands on the yoke... Preferably the right one for most tasks. I practised trimming the aircraft on my most recent flight with cadets and although I felt a bit uncertain about using my weaker left arm to fly, shortly after I saw the benefits.
The plane won't go manic if you let go... Trim it out, and enjoy the flight. If they didn't teach you that, then certainly ask about it next time you're able to. It is a fantastic tool on the aircraft and I think it lets you have a bit more free time to acquaint yourself to the rest of the plane and everything else.
The third photo shows exactly the right method! Try not to let yourself stare at the gauges too much because I find that it just ruins the view around you. Keep an eye out for events on the dash every now and then... I often take a look over to the VSI and then just adjust the trim or pitch a bit, then look outside again. Quite interesting just staring out over the wing whilst keeping it straight and level.
