Want to know if I can use virtual cockpit in planes from down-loads, and how to do this in CFS1.

I think you mean the default virtual cockpits with functional gauges (DVC). These are defined in the MDL file. It's not possible to use them in another aircraft. Creating a proper DVC was not practical for 3rd party designs until after CFS2 was released.
