It's just a very tentative opinion, but it seems to me that the earth between the crops is very light in colour, almost white, like if you put paper on a rough surface and went over it with a crayon or pencil...

That is controlled by the Seasons.bgl file for the region, the landclass file in use such as SceneryTech, UTX and other files. Although we do make the replacement snow textures when and where and how much they show is not controlled by GEX. Those images are early Spring too. So what ever the sim uses to land snow is in control of that.
Could be sooner than next year, could be early next year.. we are not making any decisions around release dates as of yet.
