How to climb in the CRJ...

How do real world pilots climb in the CRJ, it is such a slow climber, I guess they would use the step climb, which V/S speeds would they use 1500 feet per minute through 15000 then 1,000 to about 24000( the altitude which the aircraft really slows down), and then 500 feet per minute after that to cruize

What would the pilot do if he is in crontrolled airspace were he is not allowed to go below a certain speed, he would be only able to climb at 300 feet per minute as he got into the mid 20,000 feet range

Sounds like you are making it uncessary hard for yourself.
The CRJ 200 is like any other jet out there: Use climb SPEEDS instead of climb RATES. For the 200 series use 280kt/.70. (assuming you are > 10.000ft) Now you don't have to worry about changing vertical speeds.  :)

and I'm pretty sure the step climb is not used in the CRJ (remember that the ICAO step size is 4000ft, and you'd often have to fly several hundred nautical miles before you've burned enough fuel to make it profitable with a 4000ft increase)

So pilots actually climb (at about FL310) with 300-400 feet per minute using the speed button, which is what I get when climbing at 280kts/.70

Yeah, as long as the V/S exceeds 100ft/min you can continue the climb  :)
