Why don't aircraft do Cat3's all of the time..if there aircraft is equiped for that...or why not fly the approach to 200 feet and then take a/p off?

Not all runways (that have ILS) are cat 3 certified. My homebase airport is just Cat 2

Not all CREWS are either.

It's not just a matter of having the proper equipment. The aircraft AND crew must be continuously certified for  currency$$$$$$$$$$$$       Also to perform a "coupled" CATIII when the airport is not actively performing ILS or CATIII/ILS ops would be dangerous because aircraft operating on the ground would be allowed into the ILS critical area and might potentially interupt the VHF signal..................DOH!!....hate when that happens!
