2 questions,

1) In the product description it says "There are seven different models available" for the Seahawk, yet the only one I see in screenshots and YouTube videos is the ASW (USN & JMSDF) variant - are there 6 other variants, and if so, what are they?

2) Can the included ships be used in AI Carriers?

If you configure the carrier correctly, yes. My friend owns the Seahawk and there are 7, Aerosoft was just being lazy.
