I've had it for a while now and I have only thought of It now.

You can inhibit the GPWS calls on the overhead panel.
Regarding your other questions, I have no clue...but I have experienced the same one time before at JFK.  :)

From what I read (I think on the Justflight forums) the bouncing problem is a problem in the game (not to do with the aircraft) and as such, cannot be worked around/stopped.
