I think the cs 727 is, by design, more of a "lite" product.

Fsxer,

Like I said above, I had to build my own 2D cockpit so that meant a lot of flight testing.  I also made a flight from Bangor, Maine to Reykjavik.  I've never flow a B727 in R/L but I had zero problems with the flight model.  I did a power off desent into Iceland from 30K with no problems at all.

One man's opinion...

If you want more than eye candy, try the Dreamfleet. It's miles above the CS, and it books out on the numbers accoording to my US Air manual using -15 engines.

A bit of a personal vignette that may be off the topic of this Captain Sim thread, but I have to say that the Dreamfleet 727 along with the RFP 742 were the two planes that provided me with so much feeling of "virtual accomplishment" that I went out and spent mucho dinero to get fully into the hobby, with yoke, rudders, throttles, corei7 and all.  Now I'm waiting for those two airplanes to be updated for FSX.

Fsxer,

The install file I have is CSP721_2200.exe and the PFD files are dated 6/4/09.   If you're asking does the B727 I have fly to Boeing specs.  Well... who knows.  I sure don't.   The model I have descends at any rate I want and at any reasonable speed.   It will T/O and climb at 4000 fpm up to 8000 feet and fuel flow is related to throttle setting.  As far as OAT... well at 30,000 feet it's COLD.    Beyond that I can't help you.  Best of luck in your quest for the ideal B727.
